Spanish Omelette

Spanish Omelette
Ingredients
6 large whisked eggs
1 teaspoon of veg oil
1 large finely chopped potato
1 veg stock
1 red peeper finely chopped
1 courgette finely chopped
1 red onion finely chopped
4 tablespoon grated cheese

 Method
 To a pan add oil, red onion, sauté for 5 min
Add potatoes, red pepper and courgettes
Add veg stock
Cook on a low heat till potato is slightly soft (Keep aside)
To a non-stick frying pan
Add whisked eggs allow to cook for a minute
Add in your potato mixture on to egg mixture
Add cheese allow and fold half way, turn over cook for a minute or two
Or place under a grill
Serve with salad or toast

Beef and Potato Hash

BEEF AND POTATO HASH
 
Ingredients
2kg beef mince
8 tablespoons of gravy granules
2 cloves of garlic (finely chopped)
1 bag of mix veg
3 large potatoes (peeled and small diced)
1ltr boiled water
Method
Add mince to a large pan
Allow to fry (on high heat) for 5 min
Drain all excess fat
Add chopped garlic, potatoes and mix veg mix in well
Add in the gravy granules mix in
Add boiled water
Mix well, lower to medium heat, stir in between times
Allow to simmer for 25min
When potatoes are soft
You could serve with rice (optional)

Chicken Salad

Chicken salad
 
Ingredients
500 grams chicken breast cubed
$ teaspoons Cajun spice (brought from any supermarket)
Salad leaves, feta cheese, corn, cucumber, cherry tomatoes, red onion
 
Method
Add all salad leaves to a large platter
Add on all of the above ingredients and build
your salad with any left overs potatoes, peppers etc.
Add chicken and serve with a dressing of your choosing.

Sheikh Kebab

Sheek kebabs
Ingredients
1 kg Chicken/lamb mince
Coriander (fresh finely chopped)
1 teaspoon Cumin seeds
1 teaspoon Salt
1 teaspoon turmeric
1 teaspoon Garam masala
4 tablespoon Mild madras masala
Red/ chillies (optional)
Wooden skewers
 
Method
Soak wood skewers in water (stops burning in oven)
Place mincemeat in a mixing dish
Add small bunch finely chopped coriander
1tsb cumin seeds
Add mild madras masala
Add garam masala
Add salt
Mix in well together
Wrap meat around skewer press evenly across or mould by hand
 Place on foiled oven tray for 15 min in oven gas mark 5

Corriander

Flatbread
Ingredients
1 cup flour
4 tablespoon plain yoghurt
1 teaspoon baking powder
Chopped coriander
Melted garlic butter
 
Method
Add flour to a bowl
Add baking powder
Add yoghurt
Chopped coriander
Mix till you get a soft dough
Use fingers to press and flatten bread
Place frying pan on a medium heat
Lightly Butter one the  flat bread
Place in pan allow to cook 3 min per side
"We made really nice flatbread.
They tasted good"

Braised potatoes
Ingredients
4 large cubed potatoes
1 finely chopped onion
1 teaspoon cumin seeds
Half bunch finely chopped coriander
Salt to taste
1 teaspoon turmeric
1 tablespoon oil
 
Method
Add oil to a pan on medium heat add onion
Add turmeric and cumin seed  
Allow to sauté for 3 min
Add potatoes the pinch of salt
Add half cup of boiled water
Allow to cook until potatoes are soft
Add coriander and serve with flat breads

Curry and Samosas

Chicken Bhuna  
 
Ingredients         
500 cubed chicken
1tblsp Rapeseed cooking oil
1 large onion
1 can chopped tomato
Tsp ginger garlic mix , Salt
Half bunch of coriander (finely chopped)
3 table spoon Mild Madras curry powder
1tsp garam masala
1 tsp. ground cumin
1 tsp coriander powder
1 tinned beans - chickpeas etc (any canned beans can be used)
Method
Add chicken to a non stick pan
Add finely chopped onion
Add can tomato, ginger/garlic,
Add garam masala, cumin, coriander powder
Add Madras masala,
 Pinch of salt to taste
Mix well, Add a cup of boiling water
Cover pot allow to cook for 25 min gas mark 4
Stir Occassionally
Add more boiling water if you prefer more sauce
Serve with boiled rice or naan bread

Beef, Lamb or chicken Mince Samosa Filling
 500g mince
3 large  finely chopped onion
½ bunch of finely chopped coriander (dhania)
½ teaspoon cumin seeds
1 teaspoon mild madras masala
Salt to taste
Spring roll pastry
1 tables poon flour, 4 tablespoon water to
form thick paste
 Method
Add mince to pan on med heat cook for 5 min
Add all of the above ingredients and simmer till onion soft
Set aside to cool down completely
Cut spring roll sheets into strips
Fold into triangle, fill in cold mince seal with paste
and fry in shallow oil until light brown

Soup, scones and spring onions

Cheese and Spring Onion Scones
 
Ingredients
3 cups of self-raising flour
1 heaped teaspoon baking powder
5 table spoon butter or margarine
1 cup of grated cheese
1 bunch finely chopped spring onions
½ cup of milk (full fat or semi skimmed)
Baking tray grease proof paper

Method
Pre heat oven to 120
Add flour to a mixing bowl
Add the baking powder and margarine
With finger-tips, mix well until it resembles crumbs
Add cheese and mix well, add spring onion
Make a well and add the milk and form into thick sticky dough
Scoop with a tablespoon and place onto grease proof paper with another spoon
Leave space between each other
Place in oven for +- 10 min until golden brown
Remove place on a tray to cool

Cream of tomato soup
 
Ingredients
5 cans tomato (blended)
5 cubes vegetable stock
250mls fresh cream
2 onion finely sliced
2 teaspoon paprika
2 tablespoon veg oil
 
Method
To a pan add oil (medium heat)
Add chopped onion
Allow to sauté for 3 min
Add the blended tomato , veg stock and paprika
Allow to simmer for 20 min
Add fresh cream
Add basil
Allow to simmer for further 10 min
Serve hot with a splash of cream

Chicken Fajitas
Ingredients
2 pieces of Chicken cut into strips
3 red peppers cut in strips
3 pkts of fajitas powder mix (bought in any supermarkets)
1 bottle of bolognaise sauce
1 pkt of tortilla wraps
Method
Add chicken to a non stick pan
Add fajita powder mix
Cook for 8 minutes
Then add peppers and bolognaise to the pan
Allow to simmer for 10 min on low heat
Add to wraps add cheese fold
Served with salad or potato wedges

Garlic

Pitta Bread Pizza

Ingredients

One clove of garlic cut in half
Pitta bread (any supermarket)
1 small jar of red pepper pesto
200g Chicken mince
2 teaspoon mild masala
1 teaspoon cumin
Pinch of salt
1 med cut red pepper
1 pkt grated mozzarella
1 mozzarella ball

Method
To a pan add chicken mince
Add in all the spices above
Add salt
Cook for 10 minutes
Making the pitta bread pizza
Rub the garlic into the pitta bread
Add the pesto to the pitta bread base
Add on the mince and peppers
Add on cheese
Place in pre heated oven at 200 bake for 8 min

Red Pepper Pesto Burgers

In addition to these lovely pesto burgers, we also made some chunky chips!

It was wonderful to see all of the children trying to perfect their burger shaping technique. Ambreen taught us that wetting our hands before shaping the meat would stop it from sticking to us! Good advice!
Red Pepper Pesto Beef Burgers
 
Ingredients
1kg Beef
Pepper (pinch)
Salt (pinch)
2 bottles red pepper pesto (bought any supermarket)
Sliced cheese (optional)
Lettuce and tomato

Method
Place mince beef in mixing bowl
Add red pepper pesto
Add pinch of salt and pepper
Mix well together
Make into small balls on cutting board
Cover and press to flatten then place in a greaseproof oven tray
Place in middle of the oven for 10-15 min
(Or pan fry 5 min each side)
Add to Wholemeal bun add salad (Sauce optional)
