Meatballs

Meatball Marinara & Spaghetti
Ingredients

500g chicken or beef mince
Half a teaspoon of pepper
2 cubes of low salt beef or chicken stock
1 finely sliced onion
Blitz 4 char grilled peppers
1 tsp English mustard
1 tsp. sage and parsley
3 cans chopped tomato
2 cloves of garlic
1 tsp oregano
1 tsp. rapeseed/olive oil
Method
Place mince into a mixing bowl
Add pepper, English mustard, sage and parsley.
Mix in well
Form into small balls
Place in oven gas mark 5
Allow to cook for 15 min
For sauce add 1 tsp. oil, sliced onion, garlic
Add 2 cans of tomato, oregano, blitz peppers
Allow to simmer for 25 mins on low heat gas mark 4
Serve with pasta

Fajitas

Ingredients
2 pieces of Chicken cut into strips
3 red peppers cut in strips
3 pkts of fajitas powder mix (bought in any supermarkets)
1 bottle of bolognaise sauce
1 pkt of tortilla wraps
Method
Add chicken to a non-stick pan
Add fajita powder mix
Cook for 8 minutes
Then add peppers and bolognaise sauce
Allow to simmer for 10 min on low heat
Spoon into wraps and add cheese
Fold and served with salad or potato wedges

TUNA AND KEEMA 2 IN ONE WRAPS
 
Tuna Ingredients                                                                   Keema Ingredients
 
2 cans of tuna                                                                        500g beef mince
1 finely chopped red onion                                                  Pinch of salt
Sprig of finely chopped coriander                                       Mascarpone mix in sauce (found in Aldi)
3 tablespoons of mayo                                                         Half a teaspoon of paprika
4 tablespoons of grated cheese                                          Handful of grated cheese
 
Method                                                                                    Method

Mix all ingredients well                                                         Add min to a pan, allow to fry
Place in wrap to the left                                                        Add paprika, salt and pasta stir in sauce
Add cheese                                                                           Allow to cook for a further 8 min                                                                                                                                                              Place on the other half of the wrap
                                                                                                  Add cheese

 
                 ***Lightly butter wrap and pad fry or use George Forman grill***

Chow Mein

This half term, we have a new group of excited children ready to roll up their sleeves and get creative in the Stanley Road kitchen.
This week's challenge was chow mein!

Ingredients
500g Chicken breast cut into strips
1 Tablespoon oil
3 Packs of Fajita powder sachets (bought from supermarkets)
4 Red peppers cut into strips
1 Floret of broccoli stemmed
3 Chicken Chow Mein sauce sachets
2pkt Egg noodles (supermarkets)

Method
Add oil to a wok or frying pan
Then add chicken and fajita powder sachet until brown (set into another bowel)
To the same pan add all your veg including the fajita sauce
All for the vegetable to reduce then add the chicken
Allow to simmer for a further 10 min
Boil some water in a pan then add in noodle is soft, drain add 2 tablespoon olive oil
4 tablespoons light soy sauce
Serve with the Chow Mein

Chicken Paella

INGREDIENTS
500 grams chicken thigh
2 red onion sliced
2 bottles red pepper pesto
Half litre veg stock
1 cub boiled long grain or paella rice
2 teaspoon paprika
2 sliced red peppers
1 teaspoon turmeric
Hal cup frozen peas
4 boiled eggs
3 red pesto jars
METHOD
Boil rice, and set aside
Marinade the chicken with pesto
Add to large non-stick pan with red onion
Add stock allow to simmer
Add red peppers, paprika, turmeric
Allow simmering for 30 min
Add peas for a further 2 mins
When meat is cooked add rice and mix well
Turn off the heat
Plate up with squeeze of lemon

Spanish Omelette

Ingredients
6 large whisked eggs
1 teaspoon of veg oil
1 large finely chopped potato
1 veg stock
1 red peeper finely chopped
1 courgette finely chopped
1 red onion finely chopped
4 tablespoon grated cheese

 Method
 To a pan add oil, red onion, sauté for 5 min
Add potatoes, red pepper and courgettes
Add veg stock
Cook on a low heat till potato is slightly soft (Keep aside)
To a non-stick frying pan
Add whisked eggs allow to cook for a minute
Add in your potato mixture on to egg mixture
Add cheese allow and fold half way, turn over cook for a minute or two
Or place under a grill
Serve with salad or toast

Beef and Potato Hash

BEEF AND POTATO HASH
 
Ingredients
2kg beef mince
8 tablespoons of gravy granules
2 cloves of garlic (finely chopped)
1 bag of mix veg
3 large potatoes (peeled and small diced)
1ltr boiled water
Method
Add mince to a large pan
Allow to fry (on high heat) for 5 min
Drain all excess fat
Add chopped garlic, potatoes and mix veg mix in well
Add in the gravy granules mix in
Add boiled water
Mix well, lower to medium heat, stir in between times
Allow to simmer for 25min
When potatoes are soft
You could serve with rice (optional)
