Curry and Samosas

Chicken Bhuna  
 
Ingredients         
500 cubed chicken
1tblsp Rapeseed cooking oil
1 large onion
1 can chopped tomato
Tsp ginger garlic mix , Salt
Half bunch of coriander (finely chopped)
3 table spoon Mild Madras curry powder
1tsp garam masala
1 tsp. ground cumin
1 tsp coriander powder
1 tinned beans - chickpeas etc (any canned beans can be used)
Method
Add chicken to a non stick pan
Add finely chopped onion
Add can tomato, ginger/garlic,
Add garam masala, cumin, coriander powder
Add Madras masala,
 Pinch of salt to taste
Mix well, Add a cup of boiling water
Cover pot allow to cook for 25 min gas mark 4
Stir Occassionally
Add more boiling water if you prefer more sauce
Serve with boiled rice or naan bread

Beef, Lamb or chicken Mince Samosa Filling
 500g mince
3 large  finely chopped onion
½ bunch of finely chopped coriander (dhania)
½ teaspoon cumin seeds
1 teaspoon mild madras masala
Salt to taste
Spring roll pastry
1 tables poon flour, 4 tablespoon water to
form thick paste
 Method
Add mince to pan on med heat cook for 5 min
Add all of the above ingredients and simmer till onion soft
Set aside to cool down completely
Cut spring roll sheets into strips
Fold into triangle, fill in cold mince seal with paste
and fry in shallow oil until light brown
